摘 要:甲醇和氰化氢是有毒有害的化学品,工业级干冰中甲醇和氰化氢会迁移至食品中。并且,干冰与食品接触后可能引起有害物质迁移。基于此,在实验室条件下进行了模拟实验。实验结果表明,在不同时间和温度条件下,干冰中的甲醇和氰化氢会逐渐迁移至食品中,且其迁移速率与温度呈正相关。此外,加入食品中的脂肪含量也会对甲醇和氰化氢的迁移速率产生影响。此研究结果为干冰在食品运输和贮存中的应用提供了一定的参考,对于保障食品质量和安全具有一定的指导意义。Methanol and hydrogen cyanide are toxic and harmful chemicals.Methanol and hydrogen cyanide in industrial grade dry ice can migrate into food.Moreover,dry ice in contact with food may cause the migration of harmful substances.This study conducted simulation experiments under laboratory conditions.The experimental results indicate that under different time and temperature conditions,methanol and hydrogen cyanide in dry ice will gradually migrate to food,and their migration rate is positively correlated with temperature.In addition,the fat content added to food can also affect the migration rate of methanol and hydrogen cyanide.This study provides a certain reference for the application of dry ice in food transportation and storage,and has certain guiding significance for ensuring food quality and safety.
