生态放养下兴义矮脚鸡肉质营养特性研究

摘　　要：本研究以贵州地方特色鸡种兴义矮脚鸡为研究对象,随机选择43日龄的兴义矮脚鸡240羽,按公母各半均分为4组。试验设计1个对照组(基础日粮)和3个试验组,即1组(基础日粮+4%苜蓿粉)、2组(基础日粮+6%苜蓿粉)、3组(基础日粮+8%苜蓿粉),放养至163日龄出栏。测定试验鸡生产性能、肉质营养特性等指标。结果表明,兴义矮脚鸡生态放养下1组屠宰率、全净膛率、半净膛率及腿肌率都相对较好,3组指标差异较大;在生态放养条件下,兴义矮脚鸡营养条件为基础日粮+4%苜蓿草粉,该条件下兴义矮脚鸡总氨基酸和蛋白质含量最高,且肌肉中肌苷酸含量最高,肉质风味最佳。Taking Xingyi dwarf chicken,a local characteristic chicken breed in Guizhou,as the research object.240 Xingyi dwarf chickens at the age of 43 days were randomly selected and divided into 4 groups according to their male and female halves.One control group(basic diet)and three experimental groups were designed,including one group(basic diet+4%alfalfa meal),two groups(basic diet+6%alfalfa meal),and three groups(basic diet+8%alfalfa meal),which were released at the age of 163 days.Measure indicators such as production performance and meat nutritional characteristics of experimental chickens.The results showed that under ecological grazing,the slaughter rate,full bore rate,half bore rate,and leg muscle rate of the first group of Xingyi dwarf chickens were relatively good,while the indicators of the third group showed significant differences;Under ecological stocking conditions,the nutritional conditions of Xingyi dwarf chicken are based on a basic diet of 4%alfalfa grass powder.Under this condition,Xingyi dwarf chicken has the highest total amino acid and protein content,and the highest inosinic acid content in muscle,with the best meat quality and flavor.
