摘  要:浓香大曲酒在发酵过程中窖泥pH降低,形成窖泥的老化,窖泥产己酸能力减弱,导致基酒中己酸乙酯含量降低,影响基酒质量。为解决此问题,筛选出一株高产己酸的微生物,使用筛选培养基对该菌株进行富集培养,该菌株具备调节窖泥pH功能。采用显微镜镜检技术对该微生物进行形态鉴定,并采用16S rDNA测序进一步鉴定菌株的种属,鉴定该菌株为Clostridium celerecrecns。将Clostridium celerecrecns(克氏梭菌)制成养护液喷洒于窖池中,可有效改善窖池pH下降,保证基酒中己酸乙酯稳定产出,基酒中主体香更加突出,窖池中己酸菌菌数较对照组增加50%~70%,窖池pH升高2.0左右,基酒己酯含量提升0.9g/L,可有效防止窖池老化,提升基酒质量。During the fermentation process of Luzhou flavor Daqu liquor,the pH value of pit mud decreased,which led to the aging of pit mud and the weakening of caproic acid production capacity of pit mud,leading to the reduction of ethyl caproate content in the base liquor and affecting the quality of the base liquor.In order to solve this problem,a microorganism with high caproic acid production was screened,and the strain was enriched and cultured with screening medium.The strain has the function of adjusting the pH of pit mud.The morphology of the microorganism was identified by microscopy,and the species of the strain was further identified by 16S rDNA sequencing.The strain was identified as Clostridium celecrecns.Spraying the curing liquid made of Clostridium cerecrecns into the cellar can effectively improve the pH decline of the cellar,ensure the stable production of ethyl caproate in the base liquor,highlight the main flavor of the base liquor,increase the number of caproic acid bacteria in the cellar by 50%~70%compared with the control group,increase the pH of the cellar by about 2.0,and increase the hexyl ester content of the base liquor by 0.9 g/L,which can effectively prevent the aging of the cellar and improve the quality of the base liquor.
