摘 要:为明确翠碧一号上部叶适宜烘烤工艺,试验以翠碧一号上部叶为试材,研究常规烘烤工艺、骤升渐排定色烘烤工艺和缓升渐排定色烘烤工艺对烤后烟叶经济性状、外观质量、常规化学成分及感官质量的影响.结果表明,与常规烘烤工艺相比,骤升渐排定色烘烤工艺和缓升渐排定色烘烤工艺烤后烟叶中上等烟率分别提高了7.04%和10.54%,杂色烟分别降低了5.6%的6.5%,燃料成本分别降低150元和120元,烟叶外观质量改善,其中缓升渐排定色烘烤工艺利于烟叶化学成分和感官质量协调,骤升渐排定色烘烤工艺不利于内在质量协调.综上,翠碧一号上部叶烘烤以缓升渐排定色烘烤工艺最为适宜.In order to clarify the appropriate baking process for the upper leaves of CB⁃1,the upper leaf of CB⁃1 was selected as the test material.We studied three kinds of baking technology:conventional baking technology,rapid heating and gradual color fixing baking technology,and slow heating and gradual color fixing baking technology.We analyzed the effects of three processes on the economic properties,appearance quality,conventional chemical composition and sensory quality of flue⁃cured tobacco leaves.The results show that compared with conventional baking process,the percentage of medium and high grade tobacco leaves cured by rapid heating and gradual color fixing baking technology and slow heating and gradual color fixing baking technology increased by 7.04%and 10.54%respectively,the proportion of mottled tobacco leaves decreased by 5.6%and 6.5%respectively,and the fuel cost decreased by 150 yuan and 120 yuan respectively,the appearance quality of tobacco leaves has been improved.Slow heating and gradual color fixing baking technology is beneficial to the coordination of chemical composition and sensory quality of tobacco leaves,while rapid heating and gradual color fixing baking technology is not conducive to the coordination of internal quality.To sum up,it is most suitable to bake the upper leaves of CB⁃1 by slow heating and gradual color fixing baking technology.
