摘  要:食品包装是确保食品安全的重要方式。壳聚糖因具有来源广泛、生物相容性、生物可降解性、抗菌性和易于成膜等优点,成为当前食品包装材料领域的研究热点。其丰富的活性表面基团可以通过多种物理和化学方法进行修饰,为此,综述了壳聚糖与不同物质复合形成食品包装薄膜的研究进展,并简要介绍了几种常用的包装薄膜的制备方法,为进一步的研究提供有意义的指导和借鉴。最后对壳聚糖基食品包装薄膜研究的发展前景进行了展望。Food packaging is an important way to ensure food safety.Chitosan has been attracted increasingly more attention to the application in the food packaging field due to the merits of wide resource,biocompatibility,biodegradability,antibacterial property and easy film formation.Its abundant active surface groups can be modified by various physical or chemical methods.Therefore,the research progress of chitosan compounded with different substances to form food packaging films was reviewed.The preparation methods of films were introduced briefly to provide meaningful guidance and reference for further related research.Moreover,the development prospects of chitosan-based food packaging films were discussed.
