摘  要:本研究探讨了白灵菇菌丝体多糖运动饮料的最佳工艺配方。研究在单因素实验的基础上,以白灵菇菌丝体多糖使用量、木糖醇使用量、柠檬酸使用量作为试验因素,以饮料的感官评分作为响应面值,应用响应面设计方法建立数学模型并进行分析。结果表明,白灵菇菌丝体多糖运动饮料的最佳工艺配方为:白灵菇菌丝体多糖使用量40%、木糖醇使用量8%、柠檬酸使用量0.2%。按照上述工艺配方,实际感官评分为87.1。通过抗疲劳试验证明,白灵菇菌丝体多糖运动饮料能够延长小鼠负重竭力游泳时间,控制小鼠血清尿素氮含量增长,促进小鼠机体抗疲劳能力的提升。The optimum formula of Pleurotus nebrodensis mycelium polysaccharide sports beverage was studied.Based on the single factor experiment,the amount of Pleurotus nebrodensis mycelium polysaccharide,xylitol and citric acid were selected as the basic experimental factors,and the sensory evaluation score of the beverage as the response face value.The mathematical model was established and analyzed by the response surface design.The results showed that the best technological formula of Pleurotus nebrodensis mycelium polysaccharide sports beverage was:Pleurotus nebrodensis mycelium polysaccharide 40%,xylitol 8%and citric acid 0.2%.Under this process formula,the actual sensory evaluation score was 87.1.Through anti fatigue experiments,it had been proven that Pleurotus nebrodensis mycelium polysaccharide sports drink could prolong the weight bearing and strenuous swimming time of mice,and control the increase of serum urea nitrogen content in mice,and promote the improvement of the anti fatigue ability of the rat body.
