摘　　要：脂肪酸在畜禽体内承担着重要的生理功能,是维持正常生命活动的重要功能成分。当脂肪酸过度积累或代谢功能异常时,会引起脂质代谢紊乱、生长发育受阻、胴体品质和肉品质下降等一系列问题,对畜禽健康和肉品质产生不良影响。植物多酚是一类从植物中分离出的活性物质,广泛分布于自然界中,其具有调节脂肪酸代谢的功能。本文综述了植物多酚通过调节过氧化物酶体增殖物激活受体、相关代谢酶活性以及脂联素对脂肪酸代谢的调控作用及潜在机制,以期为植物多酚在调节脂肪酸代谢、改善畜禽胴体品质和肉品质中的应用提供参考。In livestock and poultry,fatty acids(FA)play an important role in maintaining their normal life activities.Excessive accumulation of FA or abnormal metabolism will cause lipid metabolism disorder,growth retardation,carcass quality and meat quality decline and other problems,which has a great impact on livestock and poultry health and meat quality.Plant polyphenol is a kind of active substances isolated from plants,which is widely distributed in nature.Many studies have confirmed that plant polyphenols have the function of regulating fatty acid metabolism.Based on previous studies,this paper summarized the effects and potential mechanisms of plant polyphenols on fatty acid metabolism through regulating peroxisome proliferator activated receptor,related metabolic enzyme activities and adiponectin,in order to provide reference for the application of plant polyphenols in regulating fatty acid metabolism and improving carcass and meat quality of livestock and poultry.
