2021年慈溪市瓜子中安赛蜜和糖精钠及其叠加使用情况分析

摘　　要：目的了解慈溪市瓜子中安赛蜜和糖精钠及其叠加使用情况。方法选择慈溪市20个乡镇采集的88份带壳瓜子,对样品中安赛蜜和糖精钠进行检测,每份样品均碾碎混匀成均一粉状,以高效液相色谱法同时检测安赛蜜和糖精钠。结果瓜壳质量大于对应瓜仁质量,甜味剂在瓜子不同部分的含量从大到小为瓜壳>瓜壳瓜仁混合>瓜仁。甜味剂检出率为安赛蜜(75.0%)>糖精钠(68.2%)>叠加使用甜味剂(63.6%),甜味剂使用超标率为叠加使用甜味剂(37.5%)>糖精钠(2.21%)>安赛蜜(0.0%),5种常见口味叠加使用甜味剂超标率从高到低为核桃味(46.7%)>五香味(42.8%)>奶油味(40.0%)>盐焗(30.8%)>原味(20.0%)。结论瓜壳作为瓜子甜味剂主要载体,不同的食用方式影响人体对甜味剂含量的摄入。慈溪市瓜子中安赛蜜和糖精钠添加情况普遍,除单项甜味剂仅糖精钠在2例样品中检出超标,其他均符合相关国家限量标准,叠加使用甜味剂对超标率有显著性影响,需要引起有关部门的重视,采取对应措施。Objective This paper aims to understand acesulfame and saccharin sodium and their superimposed use in melon seeds in Cixi city.Methods Eighty-eight samples of melon seeds with shell were collected from 20 towns in Cixi City.The contents of acesulfame and saccharin sodium in the samples were detected by high-performance liquid chromatography(HPLC).Results The quality of shell was higher than that of kernel,and the contents of sweeteners in different parts of melon seed from high to low was:shell>shell and kernel mixture>kernel.The detection rate of sweeteners was acesulfame(75.0%)>saccharin sodium(68.2%)>superimposed sweeteners(63.6%).The over-standard rate of sweeteners was superimposed sweeteners(37.5%)>saccharin sodium(2.22%)>acesulfame(0.0%);the over-standard rate of sweeten⁃ers in five common flavors from high to low was walnut flavor(46.7%)>five-spice flavor(42.8%)>cream flavor(40.0%)>salt baked(30.8%)>original flavor(20.0%).Conclusion The main carrier of sweetener in melon seeds is shell and the different dietary patterns about melon seeds affect the intake of sweeteners.Acesulfame and sodium saccharin were commonly added to melon seeds in Cixi city,except that only sodium saccharin,a single sweetener,was found to be over the limit in 2 samples,the others were all in line with the relevant national limit standards,and the addition of sweeteners has a sig⁃nificant effect on the over-standard rate,which needs to be paid attention to by relevant departments and corresponding meas⁃ures should be taken.
