摘 要:采用液相色谱串联质谱(HPLC-MS/MS)脂质组学方法,对油茶籽油的脂质轮廓进行分析,并结合脂质类别功能分析揭示油茶籽油功能特性。油茶籽油中共鉴定出6大类、22亚类、278种脂质单体分子。其中,脂质单体分子的碳链长度主要分布在35~54之间,碳链不饱和度主要分布在2~4之间。脂质含量-功能联合分析结果表明,油茶籽油的甘油酯(GL)种类、甘油三酯(TG)与甘油二酯(DG)的比值、异戊烯醇酯(PR)和固醇酯(ST)等功能脂质成分上比其他常见植物油具有优势,明确油茶籽油具有良好的促进能量消耗、抑制体内脂肪积累以及预防高血压相关疾病等重要功能。The lipid profile of camellia oil was analyzed based on lipidomics by liquid chromatography tandem mass spectrometry(HPLC-MS/MS)in this study.Then,the functional properties of camellia oil were revealed by combining the functional analysis of lipid classes.A total of 6 lipid categories,22 lipid subclasses and 278 lipid monomer molecules were identified in camellia oil.Among them,lipid molecules were mainly distributed in the carbon chain length between 35~54 and the degree of unsaturation between 2~4.The results of the combined lipid content-function analysis indicated that camellia oil had advantages over other common vegetable oils in terms of functional lipid components,such as glycerolipids(GL)type,triglyceride(TG)to diglyceride(DG)ratio,isopentenyl ester(PR)and sterol ester(ST).The results clearly indicated that camellia oil had important functions,such as promoting energy expenditure,inhibiting body fat accumulation and preventing hypertension-related diseases.
