摘 要:为研究不同醇化方式对烤烟品种翠碧一号(CB-1)片烟醇化效果的影响,对CB-1烤烟在自然、标准和洞库醇化期间的含水率、pH、化学成分含量、碘值和感官质量的变化进行对比分析。结果表明,醇化6~21个月,烟叶含水率和碘值随醇化时间的延长呈增加趋势,pH、淀粉、氮、蛋白质和烟碱含量呈下降趋势,水溶性总糖、还原糖含量和感官质量得分先升后降。洞库醇化的烟叶含水率最低,pH最高,氮、蛋白质、烟碱含量和感官质量总分均高于标准库和自然库醇化,标准库醇化的烟叶碘值高于自然库和洞库醇化。自然库醇化的烟叶适宜醇化期为15~18个月,标准库醇化的为12~15个月,洞库醇化的为18~21个月。标准库醇化的烟叶醇化速度最快,洞库醇化的烟叶保质性最好。To study the influence of different aging modes on aging effects of flue-cured tobacco CB-1,changes of moisture content,pH value,chemical composition,iodine value and sensory quality of tobacco leaves during natural,standard and cave aging were compared and analyzed.The results showed that moisture content and iodine value increased with aging time during 6 to 21 months,pH value,starch,nitrogen,protein and nicotine contents of tobacco leaves under three aging modes decreased with the increase of aging time,while water-soluble total sugar,reducing sugar contents and sensory quality evaluation scores increased first and then decreased.The moisture content of tobacco leaves was the lowest,however,the pH value of these leaves was the highest under the cave aging mode.The contents of nitrogen,protein,nicotine and total evaluation scores in tobacco leaves under the cave aging mode were higher than those under the standard and natural aging modes.The iodine value of tobacco leaves under the standard aging mode was higher than that under the natural and cave aging modes.The suitable aging duration of tobacco was from 15 to 18 months under the natural aging mode,from 12 to 15 months under the standard aging mode,and from 18 to 21 months under the cave aging mode.The tobacco leaves showed the fastest aging rate with the standard aging,but had the longest shelf life with the cave aging.
