摘　　要：为探讨紫壳蛋的蛋壳特性,研究根据蛋壳颜色将北京油鸡鸡蛋分为普通组和紫壳组,探讨了两组鸡蛋的蛋壳颜色、厚度和强度之间的差异。结果显示:普通组和紫壳组鸡蛋随着蛋壳颜色由浅到深,蛋壳厚度均呈现先增加后降低的趋势。普通组的蛋壳强度随着蛋壳颜色加深先增加后降低,但是紫壳组鸡蛋随着蛋壳颜色加深,蛋壳强度持续增加。紫壳组的蛋壳强度均优于普通组。北京油鸡鸡蛋蛋壳颜色各测量指标(光反射系数、L^(*)值、a^(*)值、b^(*)值)与蛋壳质量(厚度、强度)间均无显著相关性(P>0.05),蛋壳厚度与蛋壳强度间显著正相关(P<0.01)。结果表明蛋壳颜色对北京油鸡鸡蛋的蛋壳厚度和强度有影响,紫壳蛋具有较好的蛋壳质量。To study the eggshell characteristics of purple-shell eggs,eggs from Beijing You Chicken(BYC)were classified into normal group and purple-shell group according to eggshell colors,and the relationships among eggshell color,thickness and strength were explored in this study.The results showed that as the shell color deepened from light to dark,the eggshell thickness increased first and then followed by a decreasing trend in both groups.The eggshell strength increased first and then decreased in the normal group with the shell color deepening,while it increased continuously in the purple-shell group.Eggs in the purpleshell group showed superior eggshell strength.No significant correlation was observed between eggshell color measure indexes(re⁃flectivity,as well as L^(*),a^(*),and b^(*)values)and eggshell quality(thickness and strength)in BYC eggs(P>0.05),while a significant positive correlation was found between eggshell thickness and eggshell strength(P<0.01).The results indicated that eggshell color had effects on eggshell thickness and eggshell strength of BYC,and purple-shell eggs had superior eggshell quality.
