摘 要:研究旨在全面系统分析哈萨克马肉中营养成分,通过对放牧条件下3、5、6、7、8、9岁共18匹哈萨克母马进行屠宰,采集不同部位肉样,测定各部位脂肪酸、胆固醇、维生素A和维生素D_(3)的含量。结果显示,3岁马前腿肉多不饱和脂肪酸(亚麻酸、亚油酸)含量最高(7.53%、8.98%),极显著高于其他年龄段(P<0.01)。各部位单不饱和脂肪酸(油酸)含量差异极显著(P<0.01),但多以8岁和9岁最高。9岁马前腿肉和后腿肉胆固醇含量最高为16.98%、15.81%,极显著高于除7岁马外其他年龄的马(P<0.01)。8岁马排骨肉胆固醇含量最高(14.61%),显著高于3岁马和5岁马(P<0.05)。3岁马脂肪中维生素A含量极显著高于其他年龄(P<0.01),5岁马脂肪中维生素D_(3)含量极显著高于其他年龄(P<0.01)。研究表明,3岁为哈萨克马最佳屠宰食用年龄。The purpose of the study was to comprehensively and systematically analyze the nutritional components of Kazakh horse meat.A total of 18 Kazakh mares aged 3,5,6,7,8 and 9 years were slaughtered under grazing conditions,and the meat samples from different parts were collected to determine the content of fatty acids,cholesterol,vitamin A and vitamin D_(3) in each part.The results showed that the content of polyunsaturated fatty acids(linolenic acid and linoleic acid)in foreleg meat of three-years-old were the highest(7.53%,8.98%),which were extremely higher than those in other ages(P<0.01).The content of monounsaturated fatty acid(oleic acid)in different parts of the body was significantly different(P<0.01),but most of the content were highest at eight and nine years old.The highest cholesterol content in front leg and hind leg of nine-years-old horses was 16.98%and 15.81%,which was extremely higher than that of other horses except seven-years-old horses(P<0.01).The content of cholesterol in eight-year-old horse ribs was the highest(14.61%),which was significantly higher than that in three-years-old and five-years-old horses(P<0.05).The content of vitamin A in fat of three-years-old horses was extremely higher than that of other ages(P<0.01),and the content of vitamin D_(3) in fat of fiveyears-old horses was extremely higher than that of other ages(P<0.01).The study indicates that three-years-old is the best age for slaughter and consumption of Kazakh horses.
