摘  要:为探究虾青素对H_(2) O_(2)的抗氧化能力,利用高香草酸(Homovanillic acid,HVA)在辣根过氧化物酶(Horseradish peroxidase,HRP)催化条件下被H_(2) O_(2)氧化产生强荧光信号的联苯二聚体的化学反应,探测和分析抗氧化剂对联苯二聚体荧光光谱的改变和影响,由此建立虾青素清除H_(2) O_(2)抗氧化能力测定的新方法,并将虾青素对H_(2) O_(2)的抗氧化作用与3种典型的抗氧化剂β-胡萝卜素、维生素C和α-生育酚对H_(2) O_(2)的抗氧化作用进行比较。结果表明,虾青素的H_(2) O_(2)清除能力明显高于β-胡萝卜素、维生素C和α-生育酚,约是β-胡萝卜素的1.4倍,是维生素C的8倍,是α-生育酚的732倍。基于荧光光谱法分析天然虾青素对H_(2) O_(2)的抗氧化能力,为虾青素抗氧化功能提供新的实验依据,也有利于人们对虾青素抗氧化功能的理解和应用发掘。In order to explore the antioxidant capacity of astaxanthin to H_(2) O_(2),a new method for determining the oxidation capacity of astaxanthin to remove H_(2) O_(2) was established by detecting and analyzing the changes and effects of antioxidants on the fluorescence spectrum of biphenyl dimers under the catalytic conditions of horseradish peroxidase(HRP)using homovanillic acid(HVA)to produce a strong fluorescent signal.And the antioxidant effect of astaxanthin against H_(2) O_(2) was compared with that ofβ-carotene,vitamin C andα-tocopherols.The results showed that the H_(2) O_(2) clearance capacity of astaxanthin was significantly higher than that ofβ-carotene,vitamin C andα-tocopherol,which was about 1.4 times that ofβ-carotene,8 times that of vitamin C,and 732 times that ofα-tocopherol.The antioxidation capacity of natural astaxanthin against H_(2) O_(2) was analyzed by fluorescence spectrometry,which provides new evidence for the excellent antioxidant function of astaxanthin,and is also conducive to people’s understanding and exploration of the antioxidant function of astaxanthin.
