摘  要:大鲵(Andrias davidianus)皮肤富含胶原蛋白,成为大鲵深加工领域的研究热点之一。从大鲵皮中制备的大鲵胶原蛋白,通过热变性、部分水解获得高分子量水溶性蛋白为大鲵明胶,全部水解获得的低分子量水溶性多肽为大鲵胶原蛋白肽,即大鲵水解胶原。水解胶原由于其分子量小,具有较好的生物相溶性,可以渗透到皮肤的深层,促进皮肤胶原蛋白结构的形成,对皮肤没有刺激作用,是一种功效十分明确的改善皮肤的原料。本文对大鲵水解胶原的制备、生物活性及对皮肤护理的作用等方面进行综述,以期为大鲵的精深加工提供参考。The skin of giant salamander(Andrias davidianus)is rich in collagen,which has become one of the research focuses in the field of deep processing of giant salamander.The giant salamander collagen is prepared from the skin of giant salamander.The water-soluble giant salamander gelatin with high molecular weight is obtained by thermal denaturation and partial hydrolysis.The water-soluble giant salamander collagen peptide with low molecular weight is obtained by full hydrolysis,that is giant salamander hydrolyzed collagen.Hydrolyzed collagen has good biocompatibility due to its small molecular weight,which can penetrate into the deep skin and promote the formation of skin collagen structure.It has no irritating effect on the skin and is a very effective cosmetic raw material.In this review,the preparation,biological activities and the effects on skin care of hydrolyzed collagen of giant salamander were reviewed in order to provide reference for the further processing of giant salamander.
