摘  要:采用液相色谱法测定煎炸油中苯并(a)芘(BaP)的含量,优化了样品前处理方法。样品用正己烷提取,经SPE小柱净化,荧光检测器检测。结果表明,苯并(a)芘含量在0.5~20.0 ng·mL^(-1)线性关系良好,相关系数R2为0.9998,检出限为0.15μg·kg^(-1),定量限为0.5μg·kg^(-1),3个不同加标浓度下的平均回收率为89.1%~97.8%,相对标准偏差为0.8%~2.1%,方法灵敏度高,稳定性好。采集21份小吃店里油炸过油条、土豆、肉制品的煎炸油样品进行检测,苯并(a)芘的检出率为100%,含量为2.82~9.23μg·kg^(-1)。The content of benzo(a)pyrene(BaP)in frying oil was determined by HPLC,and the sample pretreatment method was optimized.The sample was extracted with n-hexane,purified by an SPE column,and detected by fluorescence detector.The results showed that the linear relationship of BaP was good within the mass concentration range of 0.5~20.0μg·kg^(-1),with a correlation coefficient of R^(2)=0.9998 and a detection limit of 0.15μg·kg^(-1) with a quantitative limit of 0.5μg·kg^(-1).The average recoveries under three different spiking gradients at 89.1%~97.8%,respectively,RSD ranging from 0.8%to 2.1%.The method has high sensitivity and good stability.21 fried oil samples of deep-fried dough sticks,potatoes and meat products from snack bars were collected for detection.The detection rate of BaP was 100%,and the content range was 2.82~9.23μg·kg^(-1).
