摘 要:大豆是一种常见的食用植物资源,以大豆为原料制成的传统豆制品广泛受到人们的欢迎。中国是豆类种植大国,也是多种传统豆制品的发源地之一。本文分析大豆及其制品有效成分的价值,讨论大豆及其制品的中医功效,总结大豆及其制品在中医视域下食养食疗的应用,有助于人们合理开发豆类资源,更好认识传统豆制品,从而促进其在居民日常膳食中的合理使用,预防慢性疾病的发生与发展。Soybean is a common edible plant resource,and traditional soy products made from soybean are widely welcomed by people.China is a major producer of legumes and one of the birthplaces of various traditional bean products.This paper analyzes the value of effective ingredients in soybeans and their products,discusses the traditional Chinese medicine efficacy of soybeans and their products,and summarizes the application of soybeans and their products in dietary therapy from the perspective of traditional Chinese medicine.This helps people to reasonably develop legume resources,better understand traditional soy products,and promote their rational use in residents'daily diet,preventing the occur⁃rence and development of chronic diseases.
