摘  要:以梨和药食同源的中药材白茅根、芦根为主要原料,添加卡拉胶、冰糖制成果冻。以感官评定为标准,在单因素试验的基础上进行正交试验,以此来考查中药、卡拉胶、冰糖对复合果冻的品质影响。结果表明,中药复合保健果冻的最优配方为复合中药汁添加量10%,卡拉胶添加量3%,冰糖添加量8%。按此配方制得的复合果冻口感清甜爽滑、组织细腻均匀、颜色晶莹剔透,是一款营养丰富的复合果冻食品。With pear and medicine and food of the same Chinese medicinal materials white grass root,reed root as the main raw materials,add carrageenan,rock sugar to make jelly.Based on sensory evaluation,orthogonal experiments were carried out on the basis of single factor experiment to investigate the influence of traditional Chinese medicine,carragenan and rock sugar on the quality of composite jelly.The results showed that the optimal formula of TCM compound health jelly was 10%,carrageenan was 3%and 8%of rock sugar.The compound jelly made according to this formula was sweet and smooth,with delicate and uniform organization,and crystal clear color.It was a nutritious compound jelly food.
