摘 要:为提升大球盖菇的贮藏品质,研究了产地冷库预冷处理对大球盖菇贮藏期间的品质变化,比较了产地预冷处理条件下大球盖菇的失重率、硬度、可溶性固形物含量、还原糖含量、丙二醛、蛋白质和总酚。结果表明,产地预冷处理能够降低大球盖菇的失重率、保持大球盖菇的硬度,至贮藏第12天,产地预冷处理组的可溶性固形物为6.9%,还原糖含量0.44 g/100 g,蛋白质含量10.42 mg/g,总酚含量9.41 mg/g,均高于对照组,丙二醛含量低于对照组,仅为45.86 nmol/g,感官评分高于对照组。综上所述,产地预冷处理能够延缓大球盖菇品质劣变,保证大球盖菇的贮藏期品质。The experiment of storage quality under locally precooling treatment were conducted via comparing weight loss rate,rigidity and the content of soluble solids,reducing sugar,MDA,protein,total phenols of Stropharia rugoso-annulata,so as to improve its storage quality.The results suggested that,weight loss rate,rigidity performed better under treatment,the content of the soluble solids,reducing sugar,protein,total phenols reached 6.9%,0.44 g/100 g,10.42 mg/g,9.41 mg/g respectively and more than the control while the content of MDA was 45.86 nmol/g,less than the control,sensory score showed higher performance than the control.In conclusion,precooling treatment made for postponing deterioration as well as maintaining storage quality in conclusion.
