摘  要:豆粕是水产饲料重要的原料之一,其资源丰富,营养均衡,但豆粕中抗营养因子会在一定程度上影响水产动物的消化酶活性以及肠道健康,不仅会影响水产动物的健康生长,也限制了其添加的比例。微生物发酵具有能够降解大分子物质、提高适口性、易消化吸收等优点,将发酵工艺应用于原料豆粕中实现发酵豆粕替代是当前的热点研究方向。文章结合现有研究,从发酵豆粕工艺、常用发酵菌种以及发酵豆粕替代研究现状进行了综述,旨在为水产饲料中发酵豆粕的应用提供一定参考。Soybean meal is one of the important raw materials of aquatic feed,which is rich in resources and balanced in nutrition,but the anti-nutritional factors in soybean meal will affect the digestive enzyme activity and intestinal health of aquatic animals to a certain extent,which will not only affect the healthy growth of aquatic animals,but also limit the proportion of its addition.Microbial fermentation has the advantages of degrading macromolecules,improving palatability,easy digestion and absorption,and applying fermentation technology to raw soybean meal to realize the substitution of fermented soybean meal is a hot research direction at present.Based on the existing research,the paper reviewed the fermentation soybean meal technology,common fermentation strains and substitution of fermented soybean meal,aiming to provide some reference for the application of fermented soybean meal in aquatic feed.
