摘 要:以‘品丽珠’葡萄转色前约4周(S1)、转色前约1周(S2)、转色前期(S3)果皮为试材,通过广泛靶向代谢组学分析葡萄果皮代谢物组分及变化。结果表明,S1果皮的代谢组成分有394种,S2果皮的代谢组成分有401种,S3果皮的代谢组成分有397种,3个取样期果皮中共检测出29类416种代谢物,其中373种为三者共有;转色过程中3个比较组果皮差异代谢物分别为32个(S1 vs S2)、195个(S1 vs S3)和186个(S2 vs S3),其中共有差异代谢物20个。通过KEGG富集分析显示,S1 vs S2差异代谢物主要涉及类黄酮的生物合成、次生代谢物的生物合成、二苯乙烯、二芳基庚酸类和姜酚合成、半胱氨酸和蛋氨酸代谢和异黄酮的生物合成等通路;S1 vs S3差异代谢物主要涉及代谢途径、次生代谢物、花青素和氨基酸的生物合成等通路;S2 vs S3差异代谢物主要涉及代谢途径、异黄酮、花青素和氨基酸的生物合成等通路。In this study,grape peel of'Cabernet Franc'at four weeks before veraison(S1),one week before veraison(S2)and veraison(S3)were used as materials,the components and metabolites changes during different stages based on broadly targeted metabolomic were analyzed.The results showed that 394 metabolites were detected in S1,401 metabolites were detected in S2 and 397 metabolites in S3.A total of 416 metabolites from 29 classes were detected in grape peel before veraison,among them,373 metabolites were all detected in three groups.The differential metabolites between S1 and S2 were 32,S1 and S3 were 195,S2 and S3 were 186 respectively,there were 20 differential metabolites in three stages of grape peel.KEGG enrichment analysis revealed that S1 and S2 differential metabolites mainly involved flavonoid biosynthesis,biosynthesis of secondary metabolites,stilbenoid,diarylheptanoid and gingerol biosynthesis,cysteine and methionine metabolism and isoflavonoid biosynthesis.Differential metabolites between S1 and S3 were mainly involved in metabolic pathway,secondary metabolites,anthocyanin and amino acid biosynthesis.Differential metabolites between S2 and S3 were mainly involved in metabolic pathways,isoflavonoid,anthocyanin and amino acid biosynthesis.
