摘  要:为筛选适宜加热卷烟烟叶原料的调制方式,以烤烟品种K326为试验材料,按加热卷烟感官评价方式进行综合评价,系统分析了晾制、晒制、冷冻干燥、烘烤和明火熏蒸5种不同调制方式条件下烟叶的化学成分、香气前体物和TSNA含量及加热卷烟感官质量评吸的相关关系。结果表明,在加热卷烟烟叶原料感官评吸中,明火熏蒸烟叶与烘烤烟叶相当,感官评价总分显著优于晾制、晒制和冷冻干燥,其中明火熏蒸评吸总分最高,为60.65。不同调制方式对烟叶常规化学成分的影响很大,明火熏蒸处理烟叶的还原糖、总氮和烟碱含量均为最高,分别达到24.46%、2.17%、2.88%;明火熏蒸与烘烤烟叶的多酚类物质含量相近且高于其他调制方式,其新绿原酸、绿原酸和芸香苷的含量分别较其他3种调制方式提高了42.61%~86.36%、41.80%~115.81%、28.57%~33.33%;而冷冻干燥烟叶的质体色素几乎未分解,明火熏蒸烟叶的叶绿素a、叶绿素b和β-胡萝卜素含量仅比晒制高;除冷冻干燥外,明火熏蒸处理烟叶的TSNA总量最低,仅有507.00 ng/g。通过多重相关性分析发现,明火熏蒸烟叶的总糖、还原糖、烟碱、多酚类物质以及TSNA等含量与加热卷烟烟叶感官评吸质量达到显著正相关。因此,明火熏蒸烟叶可作为加热卷烟特色烟叶的原料类型。In order to screen the curing methods suitable for heated tobacco products,the flue-cured tobacco variety K326 was used as experimental material,and the comprehensive evaluation was carried out according to the sensory evaluation method of heated cigarettes,and the relationships among chemical composition,aroma precursors,TSNA and sensory quality of heated cigarettes were systematically analyzed under five different curing methods including air-curing,sun-curing,freeze-drying,flue-curing,and open-fire fumigation.The results showed that in the sensory evaluation of heated cigarette leaves,the total scores of open-fire fumigation and flue-curing were significantly better than those of air-curing,sun-curing,and freeze-drying,and the total scores of open-fire fumigation were the highest,which was 60.65.Different curing methods had a great influence on the conventional chemical composition of heated cigarette leaves,and the contents of reducing sugar,total nitrogen,and nicotine in tobacco leaves treated with open-fire fumigation were the highest,reaching 24.46%,2.17%,and 2.88%,respectively.The contents of polyphenols in open-fire fumigation and flue-curing tobacco leaves were similar and higher than those in other curing methods,and the contents of neo-chlorogenic acid,chlorogenic acid and rutin in open-fire fumigation were 29.88%~46.31%,29.48%~53.66%and 22.22%~25.00%,respectively.The plastid pigment of freeze-drying treatment was hardly decomposed,and the contents of chlorophyll a,chlorophyll b andβ-carotene in open-fire fumigation tobacco leaves were only higher than those in sun-cured tobacco leaves.Except for freeze-drying,the total TSNA of tobacco leaves treated with open-fire fumigation was the lowest,only 507.00 ng/g.Through multiple correlation analysis,the contents of total sugar,reducing sugar,nicotine,polyphenol,and total TSNA were positively correlated with sensory smoking quality of heated cigarette leaves.The open-fire fumigation of tobacco leaves is of great practical significance to expand the raw mat
