摘 要:试验旨在研究发酵酶解豆渣替代部分基础饲粮对生长育肥猪生产性能、胴体性状、肉品质、血液指标和肠道健康的影响。试验采用单因素随机试验设计,选取800头健康的DLY(杜洛克×长白×约克夏)三元杂交商品猪,平均初始体重为(23.5±5.1)kg,随机分为2组,每组20个重复,每个重复20头。对照组饲喂不含豆渣的基础饲粮,试验组用发酵酶解豆渣替代基础饲粮,按干物质计,全程平均替代比例3.34%。全程液态饲喂,试验期为168 d。试验结束后,每个处理组选取7头体重相近的猪采血后进行屠宰采样,测定屠宰性能和猪肉品质。结果表明:①与对照组相比,试验组生产性能显著提高,全程平均日增重(ADG)提高6.1%(820 g vs 870 g),平均料重比(F/G)降低7.3%(2.75 vs 2.55),死淘率下降2.5个百分点(5.5%vs 3.0%),每千克增重的饲料成本降低9.9%(8.51元/kg vs 7.67元/kg);②与对照组相比,试验组结肠乳杆菌属显著增多(P<0.05);③两组胴体性状、猪肉品质、血清尿素氮和白蛋白含量、抗氧化和免疫指标、肠道形态结构和杯状细胞数量、肠道紧密连接蛋白和黏蛋白表达量没有显著差异(P>0.05)。豆渣经发酵酶解处理后替代3.34%基础饲料干物质以液态饲喂方式饲喂生长育肥猪可显著改善生产性能和生产效率,对胴体性状与猪肉品质无不良影响,对猪的代谢和整体健康也没有明显影响。This experiment aimed to investigate the effects of substituting Tofu residual after fermentation and enzymolysis for a portion of basal diet on the prodution performance,carcass traits,meat quality,blood indicators,and intestinal health of growing-finishing pigs.A single-factor randomized experimental design was employed,with 800 healthy DLY(Duroc×Landrace×Yorkshire)three-way crossbred pigs selected,with an average initial body weight of(23.5±5.1)kg.The pigs were randomly divided into two groups,with 20 replicates per group and 20 pigs per replicate.The control group was fed a basal diet without Tofu residual,while the experi⁃mental group was fed a basal diet with Tofu re⁃sidual after fermentation and enzymolysis,with an average substitution rate of 3.34%on a dry matter basis throughout the experiment.The pigs were fed a liquid diet throughout the 168-day trial period.At the end of the experiment,seven pigs with simi⁃lar body weights were selected from each treatment group for slaughter and sampling to measure carcass performance and meat quality.The results showed that:①Compared to the control group,the experimen⁃tal group exhibited significantly improved growth performance,with a 6.1%increase in average daily gain(820 g vs 870 g),a 7.3%decrease in average feed conversion ratio(2.75 vs 2.55),a 2.5 percentage point reduction in mortality rate(5.5%vs 3.0%),and a 9.9%decrease in feed cost per kilogram of weight gain(8.51 CNY/kg vs 7.67 CNY/kg);②compared to the control group,the experimental group showed a significant increase in the abundance of colonic Lactobacillus genus(P<0.05);③there were no significant differences(P>0.05)in carcass traits,meat quality,serum urea nitrogen and albumin levels,antioxidant and immune parameters,intestinal morphology and goblet cell count,intestinal tight junction protein and mucin expression between the two groups.The results of this study indicate that substituting 3.34%of the basal diet dry matter with Tofu residual after fermentation and enzymolysis and feeding
