摘 要:建立了高气压光电离飞行时间质谱(HPPI-TOFMS)对油脂中挥发性有机物(VOCs)的快速分析方法,1.5 min内即可获得不同油品的VOCs指纹图谱。以特级初榨橄榄油(EVOO)的掺假鉴别为例,利用OPLS-DA的S-plot曲线,获得其他3种低价植物油(精炼菜籽油,r-RO;花生油,PO;芳香菜籽油,f-RO)与EVOO相区别的特征VOCs。基于每种油品的特征VOCs,实现盲样的定性鉴别。对EVOO中分别掺入r-RO,PO和f-RO的二元掺假混合物进行HPPI-TOFMS分析,构建掺假浓度和特征VOCs信号强度之间的线性方程,对盲样的掺假浓度进行定量预测,3种盲样的“总-平均预测偏差绝对值的平均值”均位于3%以内,体现了该方法的可靠性和准确性。HPPI-TOFMS无需样品前处理,操作简单,分析快速,环境友好,可实现食用油掺假的快速定性定量鉴别,有望应用于海量市场样品的高通量筛查。A high-pressure photoionization time-of-flight mass spectrometry(HPPI-TOFMS)method was established for rapid analysis of volatile organic compounds(VOCs)in vegetable oils.The VOCs fingerprints of different types of edible oils were obtained in just 1.5 min.With the example of the adulteration identification of extra virgin olive oil(EVOO),the S-plot curve of OPLS-DA was used to obtain the unique VOCs of the other three low-cost vegetable oils,such as refined-rapeseed oil,r-RO;peanut oil,PO;and fragrant-rapeseed oil.The unique VOCs were distinguished from those of EVOO.Based on the characteristic VOCs,qualitative identifications of blind samples were realized.HPPI-TOFMS analysis was performed on the binary adulterated mixtures with different proportions of r-RO,PO,and f-RO added into EVOO.The linear regression equations between adulteration proportions and signal intensities of characteristic VOCs were constructed,utilized to quantify the adulteration proportions of blind samples.The prediction errors of all the three blind samples were all within 3%,which reflected the reliability and accuracy of the analytical method.Without any sample pretreatment,easy-to-operate,rapid in analysis,and environmental-friendly,HPPI-TOFMS could realize the rapid qualitative and quantitative identification of edible oil adulteration,having the potential to be applied to high-throughput screening of huge amount of market goods.
