摘 要:动物的营养价值主要取决于蛋白质和脂肪的含量,而我国有关爬行动物的化学成分分析与评价主要集中于龟鳖类,蛇类化学成分分析报道较少.分析了不同性别中国水蛇皮和肉的营养成分差异.利用索氏抽提法测定粗脂肪,自动定氮仪测定粗蛋白,高温灰化法测定灰分,盐酸水解法测定氨基酸,气相色谱-质谱仪测定脂肪酸.结果表明,中国水蛇蛇皮中的粗蛋白含量显著高于蛇肉,粗灰分含量显著低于蛇肉,粗脂肪含量无显著差异.雄性和雌性的粗蛋白和粗灰分含量无显著差异,雄性粗脂肪含量显著高于雌性.蛇皮中有13种氨基酸含量显著大于蛇肉,性别对16种氨基酸的含量无显著影响.中国水蛇的蛇肉和蛇皮由30种脂肪酸组成,蛇皮中有15种脂肪酸含量大于蛇肉,性别对29种脂肪酸无显著影响.中国水蛇蛇皮和蛇肉营养价值较高,且不同部位间含量存在差异,但不同性别间差异较小.The nutritional value of animals is predominantly determined by the protein and fat content.Nonetheless,in China,the chemical composition analysis and assessment of reptiles mainly concentrate on turtles,with few research on the chemical composition of snakes.Examine the nutritional composition differences between skin and flesh of Enhydris chinensis of different genders.The crude fat was determined using the Soxhlet extraction method,crude protein was measured using an automatic nitrogen analyzer,ash content was determined using high temperature ashing,amino acids were measured using hydrochloric acid hydrolysis,and fatty acids were analyzed using gas chromatography-mass spectrometry.The results indicate that the crude protein content in the snake skin of E.chinensis is significantly higher than that in the flesh,while the crude ash content is significantly lower,with no significant difference in crude fat content.There were no significant differences in crude protein and crude ash content between males and females,but the crude fat content in males was significantly higher than in females.The content of thirteen amino acids in the snake skin were significantly higher than those in flesh,and the levels of sixteen amino acids does not significantly differ between genders.The skin and flesh of E.chinensis consist of thirty types of fatty acids,with fifteen types exhibiting higher concentrations in the skin than in the flesh.Gender does not significantly affect the levels of the twenty-nine types of fatty acids.The study indicates that the basic biochemical components of E.chinensis mainly differ between body parts with little difference between genders,but both snake skin and flesh have high nutritional value.
