摘  要:为了筛选出适合桑叶多化元开发利用的桑资源品种,选取90份核心桑树种质的桑叶为试验材料,测定其总多糖和总蛋白含量及抗氧化活性,并基于CRITIC客观赋值法进行综合评价。结果表明,90份桑资源中,桑叶多糖质量比为7.21~27.37 mg/g,蛋白质质量比为68.54~324.72 mg/g;DPPH自由基清除能力介于0.14~10.09 mg/g(VC当量)之间,ABTS自由基清除能力介于0.20~2.01 mg/g(VC当量)之间。经CRITIC客观赋值法加权得分评价后,筛选出阿克苏白桑、湘7920、湘456、黄鲁桑、嘉陵30号等优势桑资源品种,其中阿克苏白桑和嘉陵30号叶片的多糖和蛋白含量俱高,可作为多糖和蛋白类药食产品开发原料来源。In order to screen out mulberry varieties suitable for multiple development and utilization of mulberry leaf,mul⁃berry leaves of 90 core mulberry germplasm resources were selected as experimental materials,and total polysaccha⁃rides content,total protein content,as well as antioxidant activity were determined.The comprehensive quality evaluation was carried out based on the method of Criteria Importance Through Inter⁃Criteria Correlation(CRITIC).The results showed that the polysaccharide content and protein content of 90 mulberry resources ranged from 7.21 mg/g to 27.37 mg/g and 68.54 mg/g to 324.72 mg/g respectively;DPPH free radical scavenging ability ranged from 0.14 mg/g to 10.09 mg/g(VC equivalent);ABTS free radical scavenging ability ranged from 0.20 mg/g to 2.01 mg/g(VC equivalent).By means of weighted score evaluation with CRITIC method,the dominant mulberry germplasm re⁃sources such as Aksu Baisang,Xiang 7920,Xiang 456,Huanglusang and Jialing 30 were screened out.Both the leaves of Aksu Baisang and Jialing 30 had high contents of polysaccharide and protein,and could be used as resources for de⁃veloping pharmaceutical and food products rich in polysaccharide and protein.
