摘 要:为明确不同营养品质在辣(甜)椒种质资源间存在的差异及变异度,筛选出优异辣(甜)椒种质,进而为高品质辣(甜)椒新品种选育提供物质基础,对97份辣(甜)椒种质资源的维生素C含量、可溶性糖含量、可溶性蛋白含量、辣椒素含量等品质指标进行测定,分析其变异度,并采用模糊数学的隶属函数法对其营养品质进行综合分析。结果表明:辣椒种质间辣椒素含量、二氢辣椒素含量及维生素C含量差异较大,变异系数分别达到99.27%、108.69%和112.60%;甜椒营养指标变异系数小于辣椒,其中可滴定酸含量变异系数最大,为34.40%;可以利用材料间的较大变异性,通过育种手段选育出优异辣(甜)椒种质资源。通过平均隶属函数法筛选出辣椒优异种质2份,分别为951-4C和91536A,其中951-4C可溶性蛋白含量最高,91536A辣椒素含量、二氢辣椒素含量均最高,其他营养指标综合表现优异;筛选出甜椒优异种质19份,排名前3位的是11-116、W-01-07、9204-8,其中11-116可溶性蛋白含量最高,维生素C含量居第2位,其他营养指标综合表现优异。In order to clarify the differences and variability of different nutritional qualities among hot(sweet) pepper germplasm resources,select out excellent hot(sweet) pepper germplasm and provide a basis for the breeding of high-quality new hot(sweet) pepper cultivars,97 hot(sweet) pepper germplasm resources were measured for quality indicators such as vitamin C content,soluble sugar content,soluble protein content,capsaicin content and other indicators,and their variabilities were analyzed.Then,the membership function method of fuzzy mathematics was used to comprehensively analyze their nutritional qualities.The results showed that there were significant differences in the contents of capsaicin,dihydrocapsaicin,and vitamin C among hot pepper germplasm,with coefficients of variation reaching 99.27%,108.69% and 112.6%,respectively.The coefficient of variation of nutritional indicators in sweet pepper was smaller than that in hot pepper,with the highest coefficient of variation of titratable acid content of 34.4%.The degree of variation could utilize the significant variability between materials to select excellent hot(sweet) pepper germplasm resources through breeding methods.Two excellent hot pepper germplasm were screened by using the average membership function method,namely 951-4C and 91536A.Among them,951-4C had the highest soluble protein content,and 91536A had the highest capsaicin content and dihydrocapsaicin content,and their other nutritional indicators showed excellent comprehensive performance.Nineteen excellent germplasm of sweet pepper were selected by using the average membership function method,with the top three ranking of 11-116,W-01-07 and 9204-8.Among them,11-116 had the highest soluble protein content and the second highest vitamin C content,and their other nutritional indicators showed excellent comprehensive performance.
