摘  要:船舶进行长远航时,往往要保证数十上百人的饮食,船舱冷库中的食材在烹饪前需进行大批量解冻处理,目前采用的热交换水流解冻方法,效率慢,工作量大。针对此需求,研发出一种适用于船舶环境的新型超声波快速批量化食品解冻装备,装备的核心部件为超声波发生器,采用抗振动、耐腐蚀、防人员撞伤等设计,并配备可海水降解薄膜袋使用,绿色环保,可较好适应船舶环境。在相关单位进行试用时,取得十分满意效果。目的:在保证食品营养基础上,提升船舶厨房人员的炊事作业效率,对做好大型船舶远洋航行后勤保障意义重大。When the ship is on a long voyage,it is often necessary to ensure the diet of dozens of hundreds of people,and the bulk ingredients in the ship's cold storage need to be thawed in large quantities before cooking,and the heat exchange water thawing method currently used has slow efficiency and large workload;in response to this demand,a new ultrasonic rapid batching food thawing equipment applicable to the ship's environment is developed,and the core component of the equipment is the ultrasonic generator,which is designed to resist vibration,corrosion resistance,anti-personnel collision design,and equipped with seawater degradable film bags to protect the environment,can better adapt to the ship environment.In the relevant units for trial,to achieve very satisfactory results.Purpose:On the basis of ensuring the nutrition of food,the efficiency of the cooking operation of the ship's galley personnel is improved,which is of great significance to the logistical support of large ships'ocean voyage.
