摘 要:目的:探讨补阳还五汤浸膏制备过程中指纹图谱变化情况并研究美拉德反应的发生。方法:利用总量统计矩法计算补阳还五汤浸膏不同时间点样品的相似度,并对各样品的还原性能进行测定,探讨中药浸膏制备过程中是否存在美拉德反应。结果:在补阳还五汤浸膏的制备过程中,不同浓缩程度各样品间指纹图谱零阶矩的RSD为8.02%,一阶矩的RSD为16.12%,二阶矩的RSD为21.34%,相似度基本呈现逐渐减小的趋势,各样品的还原性能呈现逐渐增大的趋势。结论:在浸膏的制备过程中,指纹图谱的总量统计矩参数及相似度发生明显的变化,表明在此过程中有化学反应发生;随着药液浓缩过程的进行,样品的还原能力增强,表明美拉德反应存在于浸膏制备过程中。Objective:To investigate the changes of fingerprints during the preparation of Buyang Huanwu Decoction Extract and to study the occurrence of Maillard reaction.Methods:The total statistical moment method was used to calculate the similarity of samples of Buyang Huanwu Decoction Extract at different time points,and the reduction performance of each sample was determined to explore whether there was a Maillard reaction in the preparation of Chinese herbal extract.Results:In the preparation process of Buyang Huanwu Decoction Extract,the RSD of zero-order moment of fingerprint between samples with different concentration degrees was 8.02%,the RSD of first-order moment was 16.12%,and the RSD of second-order moment was 21.34%.The similarity basically showed a decreasing trend,and the reducibility of each sample showed a gradually increasing trend.Conclusion:During the preparation of the extract,the total statistical moment parameters and similarity of the fingerprints changed significantly,indicating that chemical reactions occurred during this process.With the concentration process of the liquid,the reduction ability of the sample was enhanced,indicating that the Maillard reaction existed in the preparation process of the extract.
