摘  要:目的:测定辣椒果肉和种子中4种金属元素污染物镉(Cd)、铬(Cr)、铅(Pb)、砷(As)的含量分布。方法:采集市面上常见的5个辣椒品种,分离其果肉和种子,采用微波消解-电感耦合等离子体-质谱法(Microwave digestion-inductively coupled plasma-mass spectrometry,MD-ICP-MS)检测其中Cd、Cr、Pb和As的含量,统计分析辣椒果肉和种子之间的含量差异,并对辣椒种子进行安全性评价。结果:Cd、Cr、Pb和As在0~20μg/L范围内,回归方程线性关系良好,相关系数均大于0.9998,加标回收率在94.6%~107.2%之间。Cr、As、Cd 3种元素在辣椒种子和果肉中的含量比分别为1.34~5.29、1.03~5.52、9.27~53.83,Pb元素在采集的样本中均未检出。辣椒种子安全性评价结果显示Cr、As和Cd的摄入量占暂定每周(月)耐受摄入量(Provisional tolerable weekly(monthly)intake,PTWI(PTMI))的比例分别为:0.003%~0.15%、0.001%~0.04%和0.004%~1.67%。结论:Cr、As和Cd在5个品种的辣椒种子中的含量明显高于其在果肉中的含量。安全性评价结果显示鲜辣椒中辣椒种子较为安全,食用风险低。Objective:To determine of the distribution of Cr,Cd,Pb and As in chili pulp and seeds.Methods:The content of Cd,Cr,Pb and As in five varieties of chili pulp and seeds were determined by microwave digestion-inductively coupled plasma-mass spectrometry to analyze the content difference between pulp and seeds statistically.And then the safety evaluation of pollution elements in chili seeds was conducted.Results:The calibration curves showed good linearity in the range 0-20μg/L with correlation coefficients in excess of 0.9998.The average recoveries were 94.6%-107.2%.The content proportion of Cr,As,Cd contained in the seeds and pulp were 1.34-5.29,1.03-5.52 and 9.27-53.83 respectively.Pb was not detected in all samples.The safety evaluation of chilli seed showed that the ratios of the intake of Cr,As and Cd to PTWI or PTMI were 0.003%-0.15%,0.001%-0.04% and 0.004%-1.67% respectively.Conclusions:The content of Cr,Cd and As in seeds of varieties chili were significantly higher than that in pulp.The results of safety evaluation showed that chili seeds in fresh chilli were safe.
