摘 要:介绍了发酵的发展历程,综述了以护肤品行业为例,随着更多学科的引入和新兴技术的应用,发酵在不同时期下所呈现出的不同目的、阶段特点、所使用的技术以及代表性发酵产物,提出发酵可分为5个阶段:传统发酵阶段、工程化发展阶段、微生物学应用阶段、合成生物学阶段和智能发酵阶段,同时重点介绍了第5代发酵技术的特点、优势和产物功效,以极地酵母喜默因®为例,阐述了第5代发酵技术通过化学及生物信息学的手段,从“成分-靶点-机制-功效”的角度阐明喜默因多靶点抗老的功效机理。The evolution of fermentation technology was outlined,offering a comprehensive overview using the skincare industry as a case study/illustrative model.With the integration of various scientific disciplines and the application of emerging technologies,it discusses the diverse purposes,developmental phases,techniques,and prototypical fermentation products presented in various historical contests.Fermentation can be categorized into five stages:traditional fermentation,engineered development,microbiological applications,synthetic biology,and intelligent fermentation.Furthermore,the characteristics,advantages,and effectiveness of fifthgeneration fermentation technology were exphasized.Using HiMurchaSin®as an example,how fifth-generation fermentation technology employs a mechanistic exploration guided by‘constituents-efficacy-targets-mechanisms,’to achieve a multi-target anti-aging effect on the skin was explained.
