复方中草药添加剂对蛋鸡肌肉营养成分及肌肉品质的影响

摘　　要：为探讨复方中草药添加剂对笼养蛋鸡肌肉营养成分及品质的影响,选取350日龄的健康罗曼蛋鸡2 000羽,采用单因子试验并完全随机设计,将其分为对照组、试验Ⅰ组、试验Ⅱ组和试验Ⅲ组共4组,每组5个重复,每个重复100羽,分别在日粮中添加0、0.5%、1.0%、1.5%的复方中草药添加剂。试验期为27 d,测定胸肌和腿肌中营养成分、氨基酸含量,并通过肌肉切片分析肌肉发育情况。结果:与对照组相比,试验Ⅰ组、Ⅱ组和Ⅲ组胸肌中钙的含量分别提高了40.17%、26.35%和21.38%,差异显著(P<0.05);试验Ⅱ组腿肌中粗灰分、粗蛋白和钙的含量分别增加了20.21%、8.16%和4.68%,但差异不显著(P>0.05)。4组均检测出17种氨基酸,和对照组相比,试验Ⅰ组胸肌中必需氨基酸、非必需氨基酸和总氨基酸含量分别增加了6.03%、6.55%和6.34%(P>0.05);试验Ⅱ组和Ⅲ组腿肌中必需氨基酸、非必需氨基酸分别增加了7.82%、8.29%和8.12%、9.01%(P>0.05),总氨基酸含量增加了8.10%和8.67%(P<0.05)。显微观察可见,试验Ⅱ组的胸肌和试验Ⅰ组的腿肌组织结构清晰,肌纤维数量增多、排列紧密,肌纤维横断面较小。本试验结果表明,日粮中添加适量复方中草药添加剂能够提高蛋鸡肌肉的营养含量,改善胸肌和腿肌的肌肉品质与风味,综合判断以添加1.0%的复方中草药添加剂效果最佳。The study aimed to investigate the effect of compound Chinese medicine feed additives on the nutritional composition and quality of muscle in caged laying hens.A total of 2000 healthy Roman hens,aged 350 days,were selected for the experiment.The hens were divided into four groups,with five replicates in each group,using a single-factor experiment and a completely random design.The groups of hens were fed with diets supplemented with 0(control),0.5%,1.0%,and 1.5%compound Chinese medicine feed additives,respectively.The experimental period was 27 days.In the study,the nutrient and amino acid content in chest and leg muscles were analyzed,and the effect of compound Chinese medicine feed additives on muscle development in the birds were evaluated.The results showed that the varying proportions of these additives led to changes in nutrient contents in the muscle of the experimental groups.Specifically,the calcium content in chest muscles increased by 40.17%,26.35%,and 21.38%,respectively,in groupsⅠ,Ⅱ,andⅢ,with statistical significance(P<0.05).In groupⅡ,there was an increase of 20.21%in crude ash,8.16%in crude protein,and 4.68%in calcium in the leg muscle.Both the test group and the control group had 17 types of amino acids detected.In comparison with the control group,the essential amino acids,nonessential amino acids,and total amino acids in the chest muscle of groupⅠincreased by 6.03%,6.55%,and 6.34%,respectively,but the difference was not significant(P<0.05).Compared with the control group,both groupⅡand groupⅢshowed an increase of 7.82%and 8.29%in essential amino acids and non-essential amino acids,respectively,and the increase in groupⅡand groupⅢfor total amino acid content was 8.12%and 9.01%,respectively.The differences were not statistically significant(P 0.05).However,the total amino acid content increased significantly by 8.10%and 8.67%(P<0.05).The microscopic observation showed that the chest muscles of groupⅡand the leg muscles of groupⅠwere clear,with a higher quantity of closely arra
