摘  要:建立了超高效液相色谱-串联质谱测定植物油中甲醛、乙醛、丙醛和丙烯醛含量的方法,并且,研究了不同储存条件下,聚对苯二甲酸乙二醇酯(PET)包装瓶中4种低级脂肪醛向植物油的迁移规律。植物油中的脂肪醛经提取、衍生后,采用超高效液相色谱-串联质谱测定。结果表明,4种脂肪醛在各自质量浓度范围内线性较好,检出限为0.4~2.0μg/kg,定量限为1.0~5.0μg/kg,平均回收率为91.3%~108.5%,相对标准偏差≤7.1%。4种脂肪醛的迁移量差异较大,甲醛、乙醛的最大迁移量(≥7.8μg/cm^(2))远高于丙醛、丙烯醛(≤1.4μg/cm^(2))。各脂肪醛的迁移量随温度的升高而逐渐增大,55℃下的迁移量是25℃下的2.2~2.7倍。在避光和光照环境中分别储存4、3个月时,各脂肪醛均达到最大迁移量,然后,开始缓慢降低。与避光时相比,光照条件下各脂肪醛的迁移量提高了44%~150%,同时,光照条件加快了脂肪醛的降解速率。A method based on ultra performance liquid chromatography-tandem mass spectrometry(UPLC-MS/MS)was established for the determination of formaldehyde,acetaldehyde,propionaldehyde and acrylaldehyde in vegetable oil.The migration behaviors of four kinds of aldehydes in polyethylene glycol terephthalate(PET)packaging bottles to vegetable oil was studied at different storage conditions.The aldehydes were extracted and derivatized,and determined by tandem MS.Good linear relationships were obtained between the peak area and concentration in the corresponding mass concentration ranges.The limits of detection was 0.4~2.0μg/kg,the limits of quantification was 1.0~5.0μg/kg.The average recoveries were in the range of 91.3%~108.5%,with relative standard deviations was less than 7.1%.The migration amount of four kinds of aldehydes were quite different,the maximum migration amount of formaldehyde and acetaldehyde(≥7.8μg/cm^(2))were much higher than the others(≤1.4μg/cm^(2)).With the increase of temperature,the migration amount of aldehydes increased rapidly,the migration amount of 55℃was 2.2 to 2.7 times that of 25℃.Then stored in dark and light environments for 4 month and 3 month,respectively,the aldehydes reached the maximum migration amount.The migration amount of the aldehydes increased by 44%to 150%under light compared with that in the dark,light also accelerated the degradation rate of aldehydes.
