摘 要:文章建立了一种利用金纳米星粒子(GNSs)作为探针快速检测婴幼儿食品中Co(II)含量的方法,首先使用微波消解对检测样品进行前处理,然后基于钴离子引发类芬顿反应刻蚀GNSs导致粒子形貌及溶液发生改变的原理,通过比色法实现了对婴幼儿食品中Co(II)的高灵敏检测。结果表明:Co(II)浓度在100 pmol/L~20μmol/L范围内与GNSs溶液的局部表面等离子体共振峰(LSPR)吸收峰的波长差Δλ具有良好的线性关系(R2=0.995),对婴幼儿食品样品中Co(II)含量检测表现出良好的重现性和准确性(RSD<5%)。肉松中钴含量最高,其平均值高达0.3285 mg/kg,其次是鱼肠和奶酪棒,蔬菜泥和水果泥中钴含量较低。食品安全国家标准只规定了婴幼儿食品中铅、汞、砷、锡的限量值,而对于钴元素未设定限量值,本研究可为今后制定营养素或污染物限量标准提供参考依据,以提高婴幼儿食品的质量和安全水平。A method for rapid determination of Co(II)content in infant food using gold nanoparticle(GNSs)as probe was established.Firstly,microwave digestion was used to pre-treat the tested samples,and then based on the principle that cobalt ion induced Fenton-like reaction etching GNSs resulted in changes in particle morphology and solution,the highly sensitive detection of Co(II)in infant food was realized by colorimetric method.Experimental results showed that concentration of Co(II)in the range of 100 pmol/L-20μmol/L had a good linear relationship(R2=0.995)with the wavelength difference of the local surface plasma formant(LSPR)absorption peakΔλ.Detection of Co(II)content in infant food samples showed good reproducibility and accuracy(RSD<5%).The highest cobalt content was found in meat floce with an average value of 0.3285 mg/kg,followed by fish intestines and cheese sticks and the lowest cobalt content was found in vegetable and fruit puree.The national food safety standard only sets limits for lead,mercury,arsenic and tin in infant food,and does not set limits for cobalt.In order to improve the quality and safety of infant food,this study can provide reference for the formulation of nutrient or pollutant limit standards in the future.
