摘  要:针对缺乏蛋白质等营养素的营养不良人群,将多种人体所需基础营养素和特异性营养补充剂进行复配,以满足人体的部分营养和能量需要。通过对复合营养素固体饮料进行质量指标测定、感官评定,以及37℃、75%RH加速实验条件下储存3个月的稳定性研究,综合分析复合营养素固体饮料的品质,感官评价、水分含量、微生物等指标结果均合格,为保质期设定提供了参考依据。该固体饮料食品添加动植物双优质蛋白、DHA等复合营养素,可以为人体补充多种优质营养。In view of the lack of protein and other nutrients in the undernourished population,a variety of basic nutrients and specific nutritional supplements are compounded to meet part of their nutritional and energy needs.By measuring the quality index and sensory of products,studying the stability of the products stored for 3 months under 37℃and 75RH accelerated test conditions,comprehensively we analyzed the quality.The results of sensory evaluation,moisture content,microorganism and other indicators were all qualified,providing a reference for the setting of the shelf life.The solid drink is added with animal and plant double high-quality protein,DHA and other compound nutrients,which can supplement various high-quality nutrients for the human body.
