摘 要:为研究笼养与地面平养对皖南三黄鸡生产性能、肉品质以及福利指标的影响,试验选取5周龄体重相近的皖南三黄鸡公、母鸡各300只,按照饲养方式随机分成笼养和地面平养两组,每组公、母各150只。5~13周龄,每2周全群个体称重。13周龄时,从两组中分别取各组公、母鸡平均体重附近的公鸡与母鸡各30只进行屠宰性能、肉品质和福利指标测定。结果显示:与地面平养相比,笼养极显著提高皖南三黄鸡公鸡13周龄体重(P<0.01)。笼养公鸡胸肌率显著低于地面平养公鸡(P<0.05),而腹脂率极显著高于地面平养公鸡(P<0.01)。笼养母鸡半净膛率显著低于地面平养母鸡(P<0.05),而屠宰率、腿肌率极显著高于地面平养母鸡(P<0.01)。笼养鸡肉色L*值、b*值显著高于地面平养鸡(P<0.05)。在福利指标方面,笼养鸡脚垫评分极显著低于地面平养鸡(P<0.01),而羽毛损伤评分显著高于地面平养鸡(P<0.05),跗关节损伤、步态评分极显著高于地面平养鸡(P<0.01)。研究结果提示:笼养与地面平养对皖南三黄鸡生产性能的影响因性别而异,与地面平养饲养方式相比,笼养可以降低胸肌率、增加腹脂率,降低皖南三黄鸡母鸡屠宰率与半净膛率,而地面平养皖南三黄鸡在肉色和福利状况上更具优势。This study was conducted to evaluate the effects of cage(CR)and floor litter(FR)rearing systems on production-performance,meat quality and welfare parameters in Wannan yellow chickens.A total of 300 male and 300 female healthy birds(5 weeks of age)with similar body weights were randomly equally allocated to 2 groups(CR and FR).Body weight was monitored in-dividually every two weeks from 5 to 13 weeks of age.At 13 weeks of age,30 male and female birds from 2 groups were selected for slaughter performance,meat quality and welfare parameters analysis.The results showed that 13-week-age body weight of cocks was significantly greater in CR than that of FR(P<0.01).When compared with FR,the CR cocks had a lower breast muscle yield(P<0.05)and a higher abdominal fat yield(P<0.01).The female chickens in CR exhibited a lower partially eviscerated carcass yield(P<0.05),a lower breast muscle yield,dressing percentage(P<0.01),and a higher leg muscle yield than that in FR(P<0.01).For meat quality traits,L*and b*value of breast muscle was higher in CR birds as compared to FR(P<0.01).For welfare parameters,more severe plumage damage was observed in CR birds(P<0.05).Hock burns,and walking difficulties more frequently occurred in CR birds,as compared to FR.Additionally,FR birds present more footpad dermatitis than CR birds(P<0.05).The results indicated that CR and FR could affect the production performance of Wannan yellow chickens depending on gender manner.CR could increase abdominal fat yield and decrease the breast muscle yield of cocks and decrease partially eviscerated carcass yield,breast muscle yield and the dressing percentage of hens.Moreover,FR could improve the meat color and welfare of chickens as compared to CR.
