摘　　要：白酒作为中国特有的传统酒种,历史源远流长。酿造而成的白酒需要经过一定时间的贮存才可以陈化老熟,获得独特风味和最佳口感。用来贮存白酒的陶坛酒窖,其室内环境需求较高,受地域类型、气候特点等因素的影响,其中洞藏形式效果最佳。为提高洞藏陶坛酒窖的普适性,以邯郸丛台酒业人工洞藏陶坛酒窖为例,结合室内环境实测,分析其被动式策略,在提高白酒质量的基础上,以期为人工洞藏陶坛酒窖的被动式设计和普适性提供有价值的参考。As a unique traditional liquor in China,Baijiu has a long history.The primary Baijiu needs to be aged and matured after a certain period of storage to obtain unique flavor and the best taste.Pottery cellars used to store Baijiu have a high demand for indoor environment.Affected by regional types,climate characteristics and other factors,cave storage is the best.In order to improve the universality of cave stored pottery liquor cellars,taking the artificial cave for pottery Baijiu cellars of Handan Congtai Liquor Industry as an example,the passive strategy in combination with the indoor environmental measurement was analyzed.On the basis of improving the quality of Baijiu,it is expected to provide a valuable reference for the passive design and universality of pottery Baijiu cellars stored in artificial cave.
