摘　　要：酸价是油脂或含油食品酸败程度的衡量指标,冷溶剂自动电位滴定仪检测油脂或含油食品中酸价应用范围广泛。通过突跃曲线pH范围值、阈值、人工辅助识别突跃点等试验,得出自动电位滴定仪关键参数科学合理的设定值:突跃点pH范围设为7~11、仪器阈值设为1等,并辅以人工辅助识别突跃点的方法,探讨自动电位滴定仪使用注意事项,用于指导酸价检测工作。Acid value is a measure of rancidity degree in fatty or oily foods,the cold solvent automatic potentiometric titrator is widely used to detect acid value in oil or oil-containing food.In this paper,the jump curve pH range,the domain value,and artificial assistant identification of jump point was tested,and the scientific and reasonable setting values of the key parameters of the automatic potentiometric titrator was obtained.The pH range of jump point was 7~11.The domain value was set to 1 with the method of artificial assisted identification of jump points.The matters needing attention in the use of automatic potentiometric titrator was discussed,which was used to guide acid value detection.
