摘　　要：目前,人工养殖大鲵已具备一定规模,对大鲵进行精深加工利用成为了一个紧迫的课题。现代医学认为,大鲵具有延缓衰老、提高造血机能和免疫功能、预防心脑血管系统疾病、恶性贫血和恶性肿瘤的作用,在食品、保健食品、药品等领域具有较好的开发利用潜力。大鲵含有氨基酸、蛋白质、脂肪酸和色素等多种活性物质,活性物质的结构是其发挥生物活性的基础。综述了大鲵活性物质的功能特性,从抗氧化、抗菌及免疫活性角度展开详细介绍,阐述了大鲵体内不同活性物质的构效关系,提出其未来研究和发展的方向,为大鲵活性物质的深入研究和大鲵精深加工产品研发提供一定的参考。At present,the artificial breeding of Andrias davidianus has formed a certain scale,and the deep processing and utilization of Andrias davidianus has become an urgent topic.Modern medicine believes that the Andrias davidianus has the function of delaying senescence,improving hematopoietic function and immune function,preventing cardiovascular and cerebrovascular diseases,pernicious anemia and malignant tumors.Therefore,it has a good development and utilization prospect in the fields of food,dietary supplement,medicine and so on.Andrias davidianus has a variety of active substances,such as amino acids,proteins,fatty acids,pigments and so on,and the structure of the active substance in Andrias davidianus is the basis of its biological activity.This paper reviewed the functional properties of the active substances of Andrias davidianus,introduced the functional properties from the perspective of antioxidant,antibacterial and immune activity,expounded the structure-activity relationship of different active substances in Andrias davidianus,and proposed the future research and development trends of Andrias davidianus,which provided some references for the in-depth research on the structure-activity relationship of active substances and development of deep processing products of Andrias davidianus.
