摘  要:从玉米加工副产物提取阿拉伯木聚糖(AX)是玉米综合加工利用的重要部分。阿拉伯木聚糖(AX)是由吡喃木糖基通过β-(1→4)糖苷键连接的主链组成,侧链则通常为阿拉伯呋喃糖残基部分。AX具有较好的持水性、乳化性能、流变性能等物理特性,能够促进人体肠道健康。通过对玉米源的阿拉伯木聚糖的分子表征、物理特性以及对肠道菌群的影响作用进行比较分析和系统汇总,可为玉米AX的深入研究和产业应用提供理论基础和技术依据。Extraction of arabinoxylan(AX)from maize processing by-products is essential to integrated maize processing utilization.AX comprises a main chain of xylopyranosyl groups linked by theβ-(1→4)glycosidic bond,while the side chains are usually portions of arabinofuranose residues.AX has excellent physical properties such as water-holding,emulsification,and rheological properties,as well as the ability to promote human intestinal health.This paper presented a comparative analysis and systematic summary of the molecular characterization,physical properties,and effects on intestinal flora of maize-derived arabinoxylan to provide a theoretical foundation and technical basis for the in-depth study and industrial application of maize AX.
