摘　　要：本研究利用微生物选择培养分离方法,从伊犁哈萨克自治州熏马肠中获取优势菌种产蛋白酶乳酸菌,并研究其在不同温度、不同pH、不同金属离子等条件下的蛋白酶活力。研究结果表明,熏马肠优势菌种产蛋白酶乳酸菌符合优良微生物发酵剂理论要求。This study utilized microbial selective culture and isolation methods to obtain the dominant strain of protease producing lactic acid bacteria from smoked horse intestines in Ili Kazakh Autonomous Prefecture,and studied their protease activity under different temperature,pH,and metal ion conditions.The research results indicate that the dominant strain of smoked horse intestines producing protease and lactic acid bacteria meet the theoretical requirements for excellent microbial fermentation agents.
