摘 要:目的:建立一种采用能量色散X射线荧光(Energy-dispersive X-ray fluorescence,EDXRF)光谱快速检测酱卤猪肝中铜(Cu)、锌(Zn)、锰(Mn)和铁(Fe)元素的新方法。方法:样品以甘油水溶液辅助进行均质糊化,经EDXRF光谱扫描,通过对待测元素谱峰识别进行定性,采用加标曲线法进行定量。结果:各元素谱峰无干扰,方法的线性良好(R^(2)>0.995);Cu、Zn、Mn和Fe的检出限分别为1.28、5.81、0.88、13.7 mg/kg,定量限分别为4.27、19.3、2.92、45.7 mg/kg;总体回收率为91.83%~102.49%,相对标准偏差为1.24%~9.20%;对50份市售酱卤猪肝食品进行快检,6.0%的样品中Cu元素含量超过参考风险值。结论:该方法简单,快速,无污染,能够实现酱卤猪肝制品中关注元素Cu,以及Zn、Mn和Fe含量的快速检测,为相关产品的质量控制和监测提供了方法参考。Objective:To establish a new method for the rapid determination of copper(Cu),zinc(Zn),manganese(Mn)and iron(Fe)in marinated pork liver in sauce with energy dispersive X-ray fluorescence(EDXRF)spectrometry.Methods:The sample was homogenized and gelatinized with the assistance of glycerol solution,and then the gelatinized samples were scanned with EDXRF spectrometer.The qualitive analysis of the targets elements was performed with identification of the characteristic peaks and quantitative analysis was carried out with the spiked calibration curves.Results:The spectral peak of each element had no interference and the method linearities were good(R^(2)>0.995);The limits of detection of Cu,Zn,Mn and Fe were 1.28,5.81,0.88 mg/kg and 13.7 mg/kg,and the limits of quantification were 4.27,19.3,2.92 mg/kg and 45.7 mg/kg,respectively;The overall recoveries were 91.83%~102.49%,and the relative standard deviations were 1.24%~9.20%;A quick test was conducted on fifty commercially available marinated pork liver foods and 6.0%of the samples were found with Cu content exceeding the reference risk value.Conclusion:This method is simple,fast and pollution-free,and can realize the rapid detection of the elements content of concern Cu,Zn,Mn and Fe in marinated pork liver products,which provides a method reference for the quality control and monitoring of related products.
