摘 要:通过检测不同温度和水分条件下美国大豆发生浸油的情况,研究储藏环境对美国大豆浸油的影响,并对浸油过程中的品质变化进行了测定。结果表明,高温和高水分是导致美国大豆发生浸油的重要原因,储藏温度45℃、水质量分数4.5%的美国大豆最快在10 d内就会发生轻度浸油,50 d内达到重度浸油程度。温度25℃、水质量分数12.5%对于美国大豆而言是较为安全的储藏条件,能够有效避免大豆发生浸油。在浸油过程中,美国大豆的储存品质也发生相应变化。随着浸油率的增加即浸油程度的加深,美国大豆的粗脂肪质量分数由22.1%降低至20.8%,粗脂肪酸价和过氧化值分别升高为3.2 mg/g和0.41 mmol/kg,蛋白质溶解比率降为56.5%,大豆外观和气味发生明显变化。The effects of storage environment on abnormal oil production of U.S.soybean were studied by detecting abnormal oil production of soybean under different temperature and moisture conditions,and the quality changes were measured.The results showed that high-temperature and high-water content were the main reasons for abnormal oil production of American soybean.The soybean with 14.5%water content at storage temperature of 45℃could produce mild abnormal oil production within 10 days and reach severe oil production within 50 days.The temperature of 25℃and water content of 12.5%were relatively safe storage conditions for American soybeans,which can effectively avoid soybean changes.During abnormal oil production,the storage quality of American soybeans also changed accordingly.With the increase of oil removal rate,the crude fat content of American soybean decreased from 22.1%to 20.8%,the crude fatty acid value and peroxide value increased to 3.2 mg/g and 0.41 mmol/kg,respectively,and the protein dissolution ratio decreased to 56.5%,and the appearance and smell of soybean changed obviously.
