摘 要:亚硝酸盐是一种常用的食品添加剂,在人体消化道的酸性环境中可能会与人体吸收的食物或水中的次级胺结合,生成强致癌性的亚硝胺,清除人体内亚硝酸盐和阻断亚硝胺的合成是防癌的有效途径。雅安藏茶是一种地方特色性黑茶,属于后发酵茶,是藏族人民的生活必需品,其富含的茶多糖、有机酸、膳食纤维、黄酮类化合物、没食子酸等活性成分对清除亚硝酸盐及阻断亚硝胺合成具有良好的效果,综述了这些活性成分对亚硝酸盐清除作用的研究进展,并对今后深入研究雅安藏茶中的活性成分、多种活性成分的协同作用以及这些活性成分清除亚硝酸盐、阻断亚硝胺合成的具体作用机制进行了展望,以期引导人们科学饮用雅安藏茶,为对雅安藏茶防癌功能的进一步研究和功能性藏茶饮料的开发提供理论指导。Nitrite is a common kind of food additive.In the acidic environment of human digestive tract,the nitrite may combine with secondary amines in food or water absorbed by human body to produce strong carcinogenic nitrosamines.Scavenging nitrite and blocking the synthesis of nitrosamine are effective ways to prevent cancer.Ya’an Tibetan tea is a kind of dark tea with local characteristics and belongs to post-fermented tea,and is the daily necessity of the minority living in the Tibet region.Ya’an Tibetan tea is rich in multiple active constituents such as tea polysaccharides,organic acids,dietary fiber,flavonoid compounds and gallic acid,which have a good effect on scavenging nitrite and blocking the synthesis of nitrosamine.The paper reviewed the research advances of nitrite scavenging effect of the active constituents in Ya’an Tibetan tea,and the future research on the active constituents in Ya’an Tibetan tea,the synergistic effect of multiple active constituents,and the specific mechanism of these active constituents in scavenging nitrite and blocking the synthesis of nitrosamine were prospected,in order to guide people to drink Ya'an Tibetan tea scientifically,and to provide theoretical guidance for the further study of cancer prevention function of Ya'an Tibetan tea and the development of functional Tibetan tea beverage.
