摘  要:碘是合成人类和动物甲状腺激素的一种必需微量元素,对生长发育和新陈代谢起到非常重要的作用。在一些西方发达国家,牛乳及牛乳制品成为膳食碘的重要来源。乳制品中的碘含量为33~534μg/L,变化范围较大,主要是受泌乳动物的碘暴露量决定,例如饲料中碘含量及致甲状腺肿素含量、动物的养殖方式、季节的变化、含碘消毒剂的使用、乳制品加工处理工艺等。然而我国对乳制品碘含量影响因素的研究较少,但随着我国经济的快速发展,国民对营养关注度的提高,乳制品的摄入率及摄入量都在不断提高。因此,本文对乳制品中碘含量及影响牛乳中碘浓度的相关因素进行综述,以期为我国开展乳制品中碘含量的相关研究提供参考。Iodine is an essential trace element in the synthesis of human’s and animal’s thyroid hormones,and plays a very important role in the growth and metabolism.In some western developed countries,milk and its products have become an important source of dietary iodine.The iodine concentration in dairy products ranges from 33 to 534μg/L,and is mainly determined by the iodine exposure of lactating animals,such as iodine and goitrogens contents in feed,season farming type,teat dipping with iodine-containing disinfectant,milk processing and so on.However,there are few studies on the influencing factors of iodine concentration in dairy products in China.With the rapid development of China's economy and the increase of people's attention on nutrition,the intake of dairy products is constantly increasing.Therefore,we reviewed the reaearch progress on the iodine concentration in milk and milk products and its influencing factors,in order to provide a reference for the study of iodine content in dairy products in China.[ACTA NUTRIMENTA SINICA,2023,45(5):512-520]
