摘 要:蛋白质消化吸收对生命早期的生长发育至关重要,牛乳酪蛋白胶束矿化水平是影响婴幼儿蛋白质胃肠消化的重要因素。目前,乳制品加工业中常用的降低酪蛋白矿化水平的方法有离子交换脱钙法、螯合脱钙法和酸化脱钙法。低矿化牛乳酪蛋白能增加蛋白质溶解性、抑制蛋白凝胶形成、提高酪蛋白体外胃肠消化速率。研究发现,低矿化牛乳酪蛋白通过改变酪蛋白胶束结构,导致酸性环境和胃蛋白酶作用下形成的絮凝颗粒小且疏松,加速酪蛋白在胃中的分解和消化速率,能够帮助改善婴幼儿蛋白质胃肠消化问题,提高婴幼儿胃肠舒适度。文章旨在为婴幼儿配方奶粉选用低矿化牛乳酪蛋白胶束作为配料改善婴幼儿胃肠消化提供营养学理论支持。It is very important for the growth and development for infants of protein digestion and absorption and the mineralization levels of bovine casein micelles are the key factors affecting gastrointestinal digestion of protein in infants.At present,the commonly used methods to reduce the mineralization level of casein in dairy processing industry include ion exchange decalcification,chelation decalcification and acidification decalcification.Low-mineralized bovine casein can increase protein solubility,inhibit the formation of protein gel,and improve the gastrointestinal digestion rate of casein in vitro.The study showed that the low mineralization of bovine milk casein resulted in the formation of small and loose flocculating particles under the action of acidic environment and pepsin by changing the structure of casein micelles,thereby accelerating the decomposition and digestibility rate of casein in the stomach,which could help improve the gastrointestinal digestion of protein in infants and enhance their gastrointestinal comfort.The purpose of this study was to provide-theoretical support of nutrition for the improvement of gastrointestinal digestion of infants by selecting low mineralized cow milk casein micelles as ingredients in infant formula.
