摘 要:平菇是我国第三大食用菌,近年来栽培规模扩大、转型升级步伐加快,但存在液体菌种制作技术不完善、菌袋生产条件参差不齐、缺乏栽培技术规范和质量标准等问题,导致菌种质量差、菌袋污染率高、产量不稳定和品质不高。根据生产实践,总结平菇熟料栽培和发酵料栽培两种模式的集约化制袋、标准化出菇技术,介绍各环节要点,包括菌袋集约化生产流水线布局,出菇场地选择,品种选择,固体、液体原种和栽培种制作,栽培常用配方及培养料处理,培养料装袋、灭菌与接种,菌袋发菌管理与挑杂,出菇管理和采收等。Oyster mushroom,Pleurotus ostreatus is the third largest edible mushroom in China.In recent years,the cultivation scale has expanded and the pace of transformation and upgrading has accelerated.However,there are problems such as incomplete liquid spawn production technology,uneven cultivation bag production conditions,and a lack of cultivation technology specifications and quality standards,resulting in poor spawn quality,high contamination rate of cultivation bag,unstable yield,and low quality.Based on production practice,summarize the intensive cultivation bag making and standardized mushroom production techniques for two cultivation modes of Pleurotus ostreatus:high-temperature sterilization substrates and fermented substrates,and introduce the key points of each link,including the layout of the cultivation bag intensive production line,selection of mushroom production site,variety selection,production of solid and liquid original and cultivated spawn,commonly used cultivation formulas and treatment of cultivation materials,bagging,sterilization and inoculation of cultivation bag,spawn running and fruiting management and harvesting,etc,provide reference for the upgrading and high-quality development of the oyster mushroom industry.
