摘 要:采用16S rRNA高通量测序技术结合传统培养分离方法,比较了燕窝罐头原料与不同生产工序的微生物群系构成,通过α、β微生物多样性分析,研究了燕窝罐头生产线中的腐败微生物污染源与工序的关键控制点。结果表明:冰糖原料是燕窝罐头的主要污染来源,其中携带的地芽孢杆菌属和芽孢杆菌属是燕窝罐头的主要腐败污染菌属。此外还确定了生产线上与冰糖原料相关的工序作为生产关键控制点,从而为燕窝罐头的生产质量控制和卫生监管提供理论依据。A combination of 16S rRNA high-throughput sequencing technology and traditional culture methods was used to analyze and compare the microbial communities in raw materials for canned bird's nest and different production processes.Meanwhile,αandβmicrobial diversity analyses were used to investigate key control points for microbial contamination sources and processes in the canned production lines.The results revealed that the primary source of contamination in canned bird's nest production was the raw material of rock sugar,and the Geobacillus and Bacillus were the main contaminant genus responsible for the spoilage of canned bird's nest.Furthermore,the production processes associated with rock sugar raw materials in the production line were identified as the production critical control points.This study provides a theoretical basis for the production quality control and hygiene supervision in canned bird's nest production.
