摘  要:山东省是中国纬度最高、面积最大的北方优质茶产区,所产绿茶滋味醇厚,栗香纯正浓郁,回甘好。但山东绿茶存在诸如茶汤不绿、苦涩感重、单位面积产量明显低于南方绿茶等问题。从山东绿茶的产地、气候、栽培方式、加工技术等方面分析了山东绿茶独特品质的成因,提出了提升山东绿茶品质和产量的建议。Shandong is northern high-quality tea production area with the highest latitude and largest area in China.Shandong green tea has a pure and rich chestnut aroma,a mellow and rich taste,and a good aftertaste.However,Shandong green tea has problems such as non green tea soup,heavy bitterness and astringency,the significantly lower tea production in Shandong than in the south.According to the characteristics of Shandong tea,this article analyzed the causes of the unique quality of Shandong green tea from the perspectives of latitude,climate,cultivation methods,processing technology,and proposed development suggestions to improve the quality and production of Shandong green tea.
