摘  要:水产品在人们生活中占有重要地位,但水产品的腐败不仅带来了巨大的经济损失,还严重影响了水产品的质量安全,因此水产品的腐败问题急待解决,越来越多的研究指出水产品腐败与致腐细菌群体感应(quorum-sensing,QS)密不可分。该文介绍了QS系统的分类,综述了常见水产品中致腐细菌的QS现象,从腐败指标和生物膜的形成两个方面阐述了致腐菌株QS与水产品腐败的关系,同时总结了群体感应抑制剂(quorum-sensing inhibition,QSI)在水产品腐败中发挥的作用,并简要讨论了通过调控腐败细菌QS来抑制水产品腐败的可行性和未来发展趋势。Aquatic products play an import role in our life.Spoilage of aquatic products causes huge economic losses and seriously affects quality safety of aquatic products.Solving spoilage issue of aquatic products becomes urgent.More and more researches indicate that spoilage of aquatic products has close relation with quorum-sensing(QS)of spoilage bacterial.Therefore,we try to elucidate the classification of QS system,overviews QS phenomena of spoilage bacterial existing in common aquatic products,and states the relationship between QS of spoilage bacterial and spoilage of aquatic products from perspectives of spoilage indicators and formation of biofilm.The role of quorum-sensing inhibitor(QSI)in inhibiting the spoilage of aquatic products,and the feasibility and future development trend on how to control the spoilage of aquatic products by regulating the QS of spoilage bacterial are also discussed,aiming to provide better understanding of the microbial QS system and developing new intervention strategies to prevent seafood spoilage.
