摘 要:多酚是广泛存在于植物中的一类具有生物活性的天然物质,甘蔗中含有大量高抗氧化活性的多酚,在控制血糖水平和调节免疫力方面发挥重要作用。通过优化水和乙醇的比例,加以超声辅助破碎实现无有机残留提取甘蔗多酚,通过单因素试验法和响应面设计,对甘蔗多酚提取工艺进行优化。试验结果表明,甘蔗多酚最佳提取工艺为乙醇体积分数58%、液料比11∶1(mL·g^(-1))、水浴温度49℃、超声功率103 W,超声时间35 min,提取甘蔗多酚产量为18.87 mg·g^(-1),预测值为19.10 mg·g^(-1),该模型预测准确率达98.8%。“Polyphenols”is a class of bioactive natural substances that widely exist in plants.Sugarcane contains a large number of polyphenols with high antioxidant activity,which play an important role in controlling blood glucose levels and regulating immunity.By optimizing the ratio of water and ethanol and realizing sugarcane polyphenols without organic residues with ultrasound-assisted extraction,the sugarcane polyphenols extraction process was optimized through one-factor experimental method and response surface design.The test results show that the best extraction process of sugarcane polyphenols is ethanol concentration 58%,liquid ratio 11∶1(mL·g^(-1)),water bath temperature 49℃,ultrasonic power 103 W,ultrasonic time 35 min,the yield of sugarcane polyphenols 18.87 mg·g^(-1),and the predicted value is 19.10 mg·g^(-1).The prediction accuracy of this model is 98.8%.
